   Ingredients

  • 3 Produce Team Persian Cucumbers, peeled and grated.

  • 1 Produce Team Persian Cucumber, cut into rustic pieces with skin.

  • 1.5 Cups of Greek yogurt.

  • 10 Freshly chopped mint leaves.

  • 3 Whole fresh mint leaves.

  • ¼ Of a fresh chopped red onion.

  • 1 Fresh chopped celery stalk.

  • 1 Fresh chopped jalapeño pepper (seeds removed).

  • 2 Tablespoons of chipotle-infused extra virgin olive oil.

  • Salt.

  Preparation

1- Prepare the chipotle infused extra virgin olive oil

  • 1 Dried or canned chipotle pepper.

  • 250 ml (8oz) of extra virgin olive oil.

Blend 250 ml of extra virgin olive oil with one piece of dried smoked chipotle or canned chipotle strain well, and reserve in a jar.

Use it to add a new flavor to any of your foods.

2- Preparation the tzatziki

  • Grate 3 Persian cucumbers into a bowl, add a little salt, and let them sit for 10 minutes. After this time, remove the excess liquid and set aside. Chop the Persian cucumber into rustic cubes, add 4 pinches of salt, and let it sit for 10 minutes.Afterward, rinse with clean water to remove the excess salt and set aside.

  • Finely chop the onion, celery, jalapeño pepper, and 10 fresh mint leaves, and set aside.

  • In a bowl, mix the grated cucumber, onion, celery, jalapeño pepper, and chopped mint leaves. Add Greek yogurt and mix well. Season with a little more salt to taste.

  • Serve the mixture in a deep plate, top with the diced Persian cucumber and a few drops of chipotle-infused olive oil. Garnish with 3 fresh mint leaves.

  • Serve our Produce Team Tzatziki with toasted sourdough bread or pita bread.
